What is pastry?

Pastries are usually baked as shells or cases for other foods

What are the main ingredients used in pastry making?

All pastries contain flour, fat and a liquid. The liquid is usually water but egg can also be used for some pastries. The amount of fat to use depends on the type of pastry being made.

Types of pastry are:
Shortcrust pastry
Puff pastry
Flaky pastry
Rough puff pastry
Choux pastry
Filo pastry
Suet crust pastry
Hot water crust pastry
Pate sucree pastry
Flan pastry

Sweet pastry dish: apple and blackberry pie

Savoury pastry dish: bacon and blue cheese Danish tarts

What are the nutritional values of pastry?

Pastry is high in fat and carbohydrates however it is not a good source of protein. Therefore you need to supply that by your filling.

What are the most important points to remember when making pastry?

Make sure your ingredients and hands are as cold as possible
Handle pastry as little as possible
Pastry cannot be too thick

The importance of:
A. Sifting the flour: This is important as you have to make sure your pastry is as light as possible. By sifting the flour your adding air to your pastry mixture, this is important as there is no other raising agent used in pastry.
B. Rubbing in the fat: This is important as the mixture will not be light if there are clumps of butter/fat left in your pastry dough. It will also be uneven when rolling out.
C. Using cold water: If you use cold water it prevents the butter from melting and turning into liquid. If it does that, the pastry will not be as delicate and flaky. By using cold water the pastry will remain hard, delicate and crumbly.

Blind baking means to pre-bake a pastry shell before it is filled to protect the bottom of your tart, pie or quiche from turning soggy.

    The history of the puff pastry Napoleons is remarkable. My research referred to three different countries. The first place was Italy then Denmark and finally France. There is a folktale indicating that a royal pastry chef from Denmark created napoleons. He was lead into making the puff pastry after meeting the Emperor Napoleon I. After making the exquite desert napoleon I acquired a taste for the dessert. Therefore his chief learnt how to create the pastry. The great story about this puff pastry is that napoleon couldn’t lead his men into battle the next day because he ate too much the night before. Then it was announced that Antoine Careme created the pastry and made it popular. The dessert napoleon is called another name in France. It is called Neapolitan rather than a napoleon, which differ in spelling. Other states, that the origin and birth of napoleons is Naples, Italy. In addition to the argument it was said that they don’t make mille-feuilles in Italy. Mille-feuilles is defined as a thousand layers, but in Italy they do make square layered cakes with alternating layers of pastry and filling. The final decision was that a French pastry chief created the dessert (napolean). He made the pastry a la Neapolitan, and makes it in a similar style in which they make cakes in Italy. What I discovered from my research was that in Italy, the pastry is made with spinach, cheese and pesto. In conclusion to my research there are two different kinds of napoleons French and Italian.…

    Laminated dough is made by incasing fat in dough and taking it through a series of folds, rolling and turns. These things produce the layers of fat in between sheets of dough. The leavening in laminated dough comes most from the steam generated by the moisture from the fat. Three main types of laminated dough are danish, croissant, and puff pastry. So if all these doughs are laminated dough, what makes them different from one another? Croissant dough and danish dough are very similar, both containing yeast. Croissant dough is considered lean dough because the detrempe contains only flour, salt, water and yeast. Danish dough, however, is considered rich because it contains eggs, dairy, and sometimes sugar. Detrempe refers to strictly the dough part of the pastry before the RIF (roll in fat) is added. Puff pastry differs from croissant and danish dough because it contains no yeast and is risen only by the steam created from the moisture of the fat. Puff pastry containing more butter and no yeast results in a product that has a flaky and buttery texture that almost melts in your mouth. Danish and croissant dough containing yeast, results in a chewier texture that has slightly less flakiness to it. Some people go as far as substituting danish dough for puff pastry dough but when making classic pastry its best to stick to the dough that is originally used.
