COCONUT OIL AND ITS MEDICINAL EFFECTS
Edible oils are found in large amounts in our daily diets hence adding up to a great amount of fatty acids in our system. Examples are in our stews, some soups, several rice dishes, fried or grilled meat and fish. Many have thus perceived that oil has been the cause for several of the ailments that have plagued and still plague our race, especially heart disease and other related cholesterol issues (Blonz, 1991).Nature gives the best source of oils, such as palm kernel and coconut oil. Coconut oil was maligned as one of such oils by the American Soybean Association (ASA), when the true cause was rather the vegetable oils in our food. Why was coconut oil the victim and what truly does coconut oil do?
Coconut is scientifically known as Cocos nucifera. Coconut oil, just one of the many products from the coconut plant, comprises medium-chain fatty acids (MCFAs) found also in breast milk, which strengthen the immunity of babies to diseases.Coconut oil is in two main types; RBD (Refined, bleached and deodorized) coconut oil and Virgin coconut oil (the others that are often seen on the market are just versions of these two).The difference is characterized by the amount of processing the oil undergoes. RBD oils are made from dried coconut meat, ‘copra’ as Virgin oil is made from fresh coconut meat, ‘non-copra’. Another method for differentiating them is by their smell and taste (Fife, 2005). Virgin coconut oil is highly favoured due to its flavoured taste and sweet aroma in comparison to its counterpart, RBD oil which is bland. Coconut oil is referred to generally as the “functional food” by dieticians, since it possesses health benefits beyond its nutritional content.

    The fats found in foods are divided into four groups; saturated, mono-unsaturated, poly-unsaturated and trans-saturated fats. Each group of fats is differently assimilated by our organism, having good or bad effects upon our health. There are also the fatty acids, which form all the fats mentioned above. The four types of fats are formed from fatty acids, which are, in turn, made up of carbon and hydrogen molecules in different chemical combinations (“Brown 18-3"). These molecules build up fats and oils, biologically known as lipids. Lipids consist in long chains of fatty acids, and these chains of carbon and hydrogen atoms can be saturated or unsaturated (“Brown 18-4"). Usually, a carbon atom has 4 slots where 4 hydrogen atoms should be attached. If, in a fatty acid, all the 4 slots of each carbon have a hydrogen atom attached and other carbons adjacent to it, this means that it is a saturated lipid or fat (“Brown 18-4”). On the other hand, there are cases in which not all the 4 slots of a carbon have a hydrogen atom attached, and there are two slots on adjacent pair of carbon atoms bound to each other that lead to a double carbon-carbon bond; If this double bond occurs only once in the chain, then the fatty acid is a mono-unsaturated one (“Brown 18-4”).The last situation relates to another…

    Although fats are considered to be a part of our health, there are certain types that should be ignored. One of which has drawn controversial issues is trans-fat. Trans-fat is mostly found in many food sources such as vegetable oil, crackers, cookies and margarine. It increases blood levels of low density lipoprotein that is considered to be bad cholesterol, and decreases level of good cholesterol, high density lipoprotein. Trans-fat is created when oils are partially hydrogenated, "Partial hydrogenation is an industrial process used to make a perfectly good oil, such as soybean oil, into a perfectly bad oil. The process is used to make an oil more solid; provide longer shelf-life in baked products; provide longer fry-life for cooking oils, and provide a certain kind of texture or "mouthfeel" (Ban Trans Fat, 2006). Considering the risks that are found in trans-fat, many studies have been done worldwide and have raised questions to health and government officials to ban trans-fat.
