The Special Tinga We all have that one special dish that in every family is served for a delicious feast. In my family, the Tinga Chicken is most likely our favorite dish to eat on special occasions. The way that it’s prepared is simple. First thing is to cook the meat and right after it’s done, cut it into little pieces. Once the meat it cut, then it’s time to fry it with a little oil. While the meat is being fried, it’s time to add tiny bits of garlic, pepper plant, cumin powder, and salt. While that’s being fried, on a different plate cut multiple tomatoes and onions, and add it onto the meat, and finally put some chipotle sauce. This special dish is something that my grandmother has taught my mother how to make ever since my mother was young. The first time my mother actually tried to make this dish was when my grandmother was sick, and since this was my grandmother’s favorite dish, my mother decided to prepare it for her. Now that my mother has learned how to prepare this dish, she makes it for special events like when family comes over. My mother enjoyed to prepare this dish so much that it turned into one of her famous dishes that other family members ask her on how to make the dish. The meat is just really delicious and makes other people go for seconds. My mother loves to watch the people’s reaction to the first time they try the special Tinga meat. My mother’s favorite way to prepare this special dish is when she has orders from other family members who want this dish at their home for certain events that they host. For example my aunt is always asking my mother to prepare the Tinga meat for when she has birthday parties that she hosts at her house. My mother has no hesitation to prepare the dish because she is extremely happy that a lot of people enjoy eating her favorite dish. When my mother prepares this dish, she always prepares it the way my grandmother use to, with her favorite music playing loudly. My

    As far back as I can remember my momma had always made delicious tamales. My parents are both hard workers so when money and the time was right we would call it tamale day. The labor started Friday afternoon the season of the shredded meat with chili powder, salt, and cumin to taste. As you season the meat, add a small amount of broth to moisten meat, but it should not be runny. For every 2 cups of masa harina, add 1/2 cup of shortening or lard, 1 teaspoon of salt, and enough chili powder to make the pink dough. Add broth mixture a little at a time to the masa and mix with your hands to get a smooth, spreadable consistency. If you run out of broth, you can use hot water, but you will wish you had plenty of broth. The cleaning of the corn husk will be done in the afternoon by my two brothers and me.     Back then, I was very picky about what I ate. I only ate white rice, chicken nuggets, and pizza, which were all very bad for me. But now that I am all grown up, I am not as picky than I was as a child, and I feel more in touch with my culture now. I am Salvadoran, which people mistakenly think I am Mexican or some other race, and one food I love from El Salvador is pupusas. They are like a very thick tortilla stuffed with beans, pork, and cheese and you put hispanic coleslaw on top and pour red sauce on top of, yet I only the pupusa by itself. I remember my mom tried to make pupusas and it wasn’t like the ones we had at Salvadorian restaurant because this one had love. The first time she made it was awful, it was very dry and the beans were leaking out off the tortilla because she did not have that right corn flour to make it with.     For myself then being the youngest and favored by my grandmother and other aunties, often do not go into the kitchen to get my share of dinner.
