1.0 Introduction

Quality and Operations Management, is a subject that deals with the quality of products and services in which it is sent on to end users. And in the meantime, Operations Management can be defined and can be concerns about the management system products, processes and services across the supply chain. To get a better understanding about Quality and Operations Management in more detail. There is a group of six students have been assigned by the lecturer, Ms Chow MeiMin to conduct a study on the actual case of the companies selected based on the hotel industry, which is where this company, adopt and implement quality and operations management as a key part of the their business process .

The purpose of this study is to reveal us how the hotel industry, especially in the Food & Beverage (F & B) Department ,Everly Hotel, manage and control the quality of hotel operations as well as the practice Chief Chef

    The food industry is an enormous, cumulative and a distinct business with a complicated network that encompasses cultivation, manufacturing, packaging and distribution. Only in the US, people expend above one trillion on food alone. This is approximately equal to 10% of the gross domestic product (GDP) of the United States. In food processing industries, back of house refers to the area where the food is prepared, while the front of house refers to the area where customers are served food. Usually commercial food processors use Six Sigma techniques because they have a built-in production set up (Philips, 2015).Continuous quality improvement is essential for food industries because the consumption of food is on day-to-day basis throughout the world. In food processing industries, quality is not just a fundamental goal but it is the bottom line of a business because the customer expectations are always high. Large amount of perishable and non-perishable food is manufactured and delivered throughout the world. Hence the need for quality and speed is required by increasing the productivity which raises profits for the food industry. Quality can be acquired by reducing variations in the product, size, and taste. Speed does not just imply how fast the food is delivered but also how best conditions are important for eliminating wastage.…

    This report provides an analysis and evaluation of the Just-In-Time system, the advantages and disadvantages of the system and how it would benefit AG & Z. The Just-In-Time (JIT) system is a process where goods are ordered as required, as opposed to the currently used batch processing system where goods are made in bulk and stored in warehouses until sold. The Just-In-Time system was initially developed to not only cut down the amount of waste produced by other systems, which was seen as incurring unnecessary costs rather than adding value to the company, but to also meet customer demands with minimum delays. It has been found that when implemented correctly the JIT system can benefit the company in numerous ways. For example, it has been shown to reduce the amount of inventory stored in warehouses as goods are sold direct to the customer as ordered. It has also been shown to speed up production lead times, eliminate and/or minimise the amount of quality control and reduce the amount of faulty stock returned. As well as benefiting companies in reducing transportation costs, as goods are sent from the factory to the customer rather then via a warehouse first. Another advantage is, the JIT system allows the company to keep up to date with customer demands and new technologies as the goods are made to order so the newest technology available is used. This is extremely important when dealing with goods that have a high turn over such as computers, because the goods would be produced as needed. It has also been proven to eliminate waste on any goods manufactured which have become obsolete due to technological advances. While there are some disadvantages to the JIT system, such as stock outs and possible communication break downs, (explained in detail in the report), the advantages far out weight the disadvantages. “JIT manufacturing has the capacity, when properly adapted to the organisation, to strengthen the organisations…
