A. Background of the Study
Today, the abundance of unhealthy foods all around us is alarming. Everywhere we look we see all of these junk foods loaded with salt and monosodium glutamate and other unhealthy components. Obesity rates are increasing, especially with the youth. According to a recent survey by the National Statistics Coordination Board (NSCB) as of 2008 showed that 26.6% of Filipino adults are overweight, higher than 16.6% in 1993. Among children aged 5 to 10 years old, 6.6% are overweight against only 5.8% during the last survey in 2003. Obese people, meanwhile, are more prone to non-communicable diseases (NCDs) such as diabetes, heart disease and stroke, said Dr. Tony Dans of the Philippine General Hospital. Using the waist-to-hip ratio, Dans said "a third of Filipinos are obese and at risk of heart disease."
These facts have led us to perform research on healthy substances that we can use to substitute some of the unhealthy parts of the food we eat.
It has been proven by a lot of researches that the leaves Moringa oleifera are very nutritious. It has been called “the miracle tree” by some specialists because of its abundance in nutrients and healthy components like vitamins. Moringa plant is one of the richest sources of Vitamins. Moringa has Vitamin A (Beta Carotene), Vitamin B1 (Thiamine), Vitamin B2 (Riboflavin), Vitamin B3 (Niacin), Vitamin B6 Pyrodixine), Vitamin B7 (Biotin), Vitamin C (Ascorbic Acid), Vitamin D (Cholecalciferol), Vitamin E (Tocopherol) and Vitamin K, Calcium, Copper, Iron, Potassium, Magnesium, Manganese and Zinc. Moringa has 17 times more Calcium than that of milk, Moringa, with 25 times more Iron than that of Spinach, 15 times the potassium in banana assists in the regulation of the acid-base and water balance in the blood and the body tissues.
