History of Chocolate
Chocolate is made from cocoa powder, which comes from the cocoa tree’s football shaped, melon-like fruit. Cocoa trees grow best in the tropical environments of Africa and South America under the shade of the rainforest canopy. Inside the pods are the beans, which must be dried and ground to create the cocoa powder.1
The earliest known mention of cocoa dates back to about 4000 years ago in the Amazon Forest. 1 The first clear use of cocoa was by the Mayan people in Mexico in the Sixth Century, where it was consumed as a cold, unsweetened beverage. The word chocolate actually comes from a Mayan word meaning “bitter water.” The cocoa pod symbolized life and fertility and was considered the god’s food. 2
When the Spanish invaded Mexico, they brought the seeds back home to Spain where new recipes were created. This began the evolution of chocolate in Europe, where the Swiss eventually became known as the premier makers of chocolates.
Chocolate production was brought to the United States by Milton Hershey in 1893. Chocolate has since become the favorite indulgence of many Americans.

The Chocolate Industry Today
Cocoa pods must be harvested by hand. Each fruit contains 20 to 40 seeds or cocoa beans. The beans are removed from the pods and placed in large piles to ferment, which takes about one week; this develops the rich cocoa flavor.     By 1867, Hershey’s father “had largely cut himself out of the family picture” (Milton). Following an incomplete rural school education, he was apprenticed at the age of fifteen but was fired shortly after. Four years later, Hershey borrowed one hundred and fifty dollars from a gracious aunt to set up his own shop in the heart of Philadelphia. For five long years Hershey put everything he had into the business. But success eluded him, he finally closed shop and headed west to reunite with his father. With his father, Hershey found work with a confectioner. But the entrepreneur in Hershey was not content to work for someone else, and he then struck out on his own again. First in Chicago and later in New York City, but in both cases he failed again (Milton). Then in 1883, he returned to Lancaster and still convinced that he could construct a successful candy company, started the Lancaster Carmel Company. Within a few short years Hershey had a successful and thriving business. But when Hershey got an up-close look at the art of chocolate making he was immediately hooked. “The fascination quickly became focused on milk chocolate, considered a delicacy” (Milton), but was largely dominated by the Swiss. In 1900, Hershey sold the Lancaster Caramel Company for a staggering one million dollars and started a new company. Quickly, the Hershey Chocolate Company surpassed the founder’s previous venture.…

    The first key invention that revolutionized chocolate production was the hydraulic press invented by Conrad Van Houten in 1828 (Presilla 39). During this process, chocolate liquor is put into a small cylinder. The tremendous force produced by this cylinder squeezes out the fat from the chocolate, separating the cocoa butter and leaving a round puck of cocoa powder. Each ingredient can be consumed for its original use or combined (Presilla 40). A second invention of the conch by Rodolphe Lindt in 1879 made the production of chocolate cheaper and more appealing (Presilla 40). Van Houten 's press combined with this new invention made it possible to produce a higher quality of chocolate with a cheaper and more consistent product, which made it popular with mass consumption. Although the Industrial Revolution initially introduced techniques and machines, computers have now allowed us a level of control, speed, and precision that are achieved now by manufacturers. As a result, manufacturers were looking for ways to improve the consistency and quality of their product without raising costs. Modern innovations of producing chocolate led to the low pay of workers in factories and fewer jobs for those people as well as the desire for cheaper costs and technology advancements have grown.
