DIGESTION OF CARBOHYDRATES

Digestion of carbohydrate begins in the mouth, with the secretion of the enzyme salivary amylase from the serous cells of the salivary gland. This enzyme breaks starch and glycogen into disaccharides. The mucous cells of the salivary gland secrete a mucus, which causes the food to stick together, and acts as a lubricant to aid in swallowing. The salivary glands are grouped into three categories: the parotid gland, submandibular glands, and sublingual, all located near the mouth. The food (bolus) is forced into the pharynx by the tongue. As the food is swallowed, it moves into the esophagus (a straight collapsible tube), which essentially provides a passageway from the pharynx to the stomach. The mucous glands of the esophagus secrete mucus to aid in moistening and lubricating the bolus. The bolus passes through the cardiac sphincter, into the first section of the stomach. The stomach is divided into several regions: the cardiac region, body region, fundic region, and pyloric region. The stomach works to mix and churn the food, which aids in further digestion of carbohydrates. At this point, the bolus is converted into a semifluid paste of bolus and gastric juices called chyme. The chyme then travels through the pyloric sphincter into the first section of the small intestines. The small intestines is divided into three sections: the duodenum, jejunum, and ileum. The majority of digestion of carbohydrates takes place in the small intestines. As the chyme moves into the duodenum, an enzyme called pancreatic amylase is released through the pancreatic duct. This enzyme splits molecules of starch and glycogen into disaccharides. The liver plays an important role in the several metabolic activities. It is responsible for changing glycogen to glucose to increase blood glucose or converting glucose to glycogen, thereby decreasing blood glucose.     When a human sees or smells food the salivary glands are the first thing to react in the digestive system. Once the food is placed into the mouth, it is then taken over by the teeth, tongue, and saliva. These three are what help make the food moist and small enough to be swallowed. At this point the food then becomes what is called bolus. The bolus is then traveled through the pharynx then esophagus, and into the stomach. When the food travels through the pharynx, the epiglottis makes sure that the food paces by the without interring the lungs. The small intestine is made up of three parts, these parts are called, the jejunum, the ileum, and the duodenum.     The Digestive System is the name given to the sequential process that our bodies perform when ingesting food, and the breaking down of macromolecules into micromolecules so that the body can absorb it’s nutrients into the bloodstream and it’s cellular system to obtain energy for cellular respiration, and the excretion all indigestible waste products. This happens within the digestive tract, which starts at the Mouth or Oral cavity and ends at the Anus. (Reference Appended image 1,’ The Human digestive system and associated organs). The molecules of food that we eat are generally Polymers, i.e., large, complex Molecules that are composed of long chains of Monomers. Polymers are insoluble and therefore cannot be absorbed into our bloodstream and need to be assimilated into different absorptive products. Polymers have to be hydrolysed into smaller, soluble molecules. This process happens during the process of digestion. Food is broken down by mechanical or chemical means (Hydrolysis) and this process is aided by Enzymes. Enzymes are biological, process catalysing Proteins which massively speed up the breaking down of compound molecules into micromolecules to allow nutritional absorption. All digestive Enzymes are Hydrolytic, i.e., a water molecule is added to allow compound molecular breakdown and separation. All Enzymes have a unique shape to their ‘active site’ allowing only the target substrate to bond for biological processing. Enzymes have optimum operating requirements and can denature if the temperature becomes too warm or the environment too acidic or alkaline. Digestive Enzyme secretion is regulated by both the nervous and the hormonal systems. Hormones are a chemical substance signalling system that communicates from one set of cells to another set, the target cells, which will then trigger enzyme secretion.…
