The Design Brief
The McGrath foundation has given me the opportunity to host a high tea in memory of the cofounder Jane McGrath and anyone who has lost their battle to breast cancer. The tea is set to commence on the 15th of May, I am hoping to encourage the small community to get actively involved. Each year around Australia high teas are set up to honor and remember anyone who has lost their battle, the day is also about having a good time and donating to the foundation to help raise money to go towards cures and other preventions for the disease. I want to prepare foods within a reasonable budget but make them creative, fun but still classy as it is a high tea.
I will incorporate both complex and secondary cooking processes to ensure the food is of the highest quality. I plan to make some of the components to a few of the products prior to the day as they can be stored and still kept fresh; the rest will be made on the day and constructed to be served at the foyer. The tea will be held at the local function center and some of the food components will have to be transported there. Everything else will be prepared in the kitchen provided at the function center. I plan to serve everything on a 3 three-tiered cake stand as I find it is the best way to present and access all the food that will be served on the day. The Design Brief
