Cognitive Assessment
Because of how stressful the life of an average American is, these researchers wanted to test food to determine if there was cognitive enhancing characteristics that benefit people who eat that food. The food that they decided to test was essence of chicken (EOC), an aqueous chicken extract. EOC consists of proteins, amino acids, and peptides such as carnosine and anserine. It is believed that EOC enhances learning, memory, and executive function. In order to determine whether or not this is true, researchers gave healthy subjects either a placebo pill, or a pill containing CMI-168, an ingredient in chicken. 46 healthy male and female subjects, aged 35 to 65, were recruited to take part in this study. Their mental health was tested the following tests: The General Health Questionnaire, The Beck Anxiety Inventory, The Beck Depression Inventory, and The Sheehan Disability Scale. 26 of the original 46 subject were not included in the dada

According to all of the psychological tests, there were no significant differences between those who took CMI-168 daily, and those who were given a placebo. For the cognitive assessments, the researchers did find statistically significant differences between the groups. All three times that the Rey Auditory visual learning test was given, the group that was supplemented by CMI-168 scored higher. (Alpha of .001) For the Digits forward test, they scored higher with an alpha level of .05, and for the Digits Backward test, the scored higher at an alpha level of .001. Even up to two weeks after, they scored higher with an alpha level of .01. The results for the Letter Number Sequencing test showed the same statistical significance as the Digits backward portion of the test.
