1.¿Cuáles eran las razones en la caída del consumo del café? En las últimas dos décadas el consumo del café ha disminuido gradualmente, se ha mantenido constante en personas pertenecientes al segmento de edades de 60 años en adelante pero ha disminuido considerablemente en el segmento de personas de 20 a 29 años. Antes, veinte años antes del estudio, el consumo de este segmento era de 81% para la fecha del experimento se estimaba en solo el 30%, esto genera preocupación ya que estos es donde se encuentran los futuros consumidores. Las principales causas por las cuales el consumo del café disminuyó son las siguientes:
• Una de las razones más influyentes es la fuerte competencia con las bebidas ligeras. En 1961 las personas consumían el doble de café en relación a bebidas ligeras, pero veinte años después, las bebidas ligeras lograron posicionarse crecientemente en el mercado, gracias a su comercialización agresiva, como resultado en 1981 se consumía el doble de bebidas ligeras en relación al café. Una de sus estrategias era que estos productos siempre estaban disponibles para el consumidor, utilizando dispensadores “Breakmate”. Además lograron un buen posicionamiento de mercado basado en su mensaje de que eran productos de la nueva generación. Según International Coffe Organization en 1980 el consumo más importante del café se realizaba en los hogares a la hora del desayuno. Esto se vio fuertemente afectado por la introducción de bebidas ligeras como sustitutas del café. La estrategia de las gaseosas “have a coke in the morning”, y “high caffeine morning cola” tuvieron positivos efectos en el mercado, bajando la participación de las compañías cafeteras.
• Otro elemento que hizo que el consumo de café disminuyera se relaciona con los reportes médicos respecto a los efectos negativos de la cafeína sobre la salud. Aunque cabe mencionar que la cafeína también se encuentra en la cola, chocolate, té, y medicinas, el café fue el que más se vio afectado por
