Scurt istoric

Iaurtul isi are originea in Asia sau in Europa de est si a aparut ca raspuns la nevoia de a conserva laptele peste cele cateva ore care urmau mulsului. Astfel a inceput aventura descoperirii nenumaratelor avantaje nutritionale si medicale pe care le detine.Coagularea laptelui a fost, desigur, descoperit absolut din intimplare. in foarte multe tari, Grecia, Turcia, Mongolia sau India, consumarea iaurtului face parte din traditie, dar incepand cu anii '20 ai secolului al XX-lea, iaurtul se raspandeste si in Europa Occidentala. Cuvantul iaurt, care vine din limba turca, youghurmak insemnand "a ingrosa", este utilizat in mod curent, atat in America de Nord-yoghurt, cat si in Europa si desemneaza versiunea moderna a laptelui prins de altadata.
In societatea moderna, omul este asaltat in fiecare zi de ritmul cotidian impus de schimbarile tot mai dese intervenite in evolutia societtii. Poluarea, stresul, intensele solicitari zilnice conduc inevitabil la o scadere a rezistentei organismului, acesta fiind tot mai expus si mai vulnerabil. Astfel, inevitabil, apar intrebari referitoare la mentinerea sanatatii si protejarea organismului. Acestea sunt intrebari pe care fiecare persoana si le pune, chiar daca nu le formuleaza in mod explicit. Piata produselor lactate poate constitui un exemplu in privinta consumului de iaurt din ce in ce mai ridicat la noi in tara.Iaurtul este considerat alimentul sanatos din familia lactatelor. Este considerat unul din alimentele care ajuta la prelungirea vietii. De obicei, iaurtul este corelat cu efectele sale benefice asupra organismului. Multi il consuma drept adjuvant al digestiei. Iaurtul acidofil ajuta la redobandirea florei bacteriene normale a colonului, ceea ce duce la o digestie completa si la o valorificare mai buna a alimentelor bogate in fibre.Iaurtul nu e o revelatie a secolului nostru. Cu mii de ani in urma, el era bine cunoscut de unele popoare din Orientul Mijlociu si constituia
